  • Yield: 20 brownie squares
  • Diet: Vegetarian

Description

These brownies are a banana bread lover’s dream—dense, moist, and topped with a thick vanilla glaze that drips perfectly down each bite. One bowl, no mixer needed, and they bake up beautifully golden and rich with banana flavor. Add this one to your “must bake” list ASAP!

Ingredients

For the Brownies:
• 2 eggs
• 3 ripe bananas, mashed
• 1½ cups granulated sugar
• 1 cup sour cream
• ½ cup unsalted butter, softened
• 2 tsp vanilla extract
• 2 cups all-purpose flour
• 1 tsp baking soda
• ½ tsp salt
• ½ cup chopped walnuts (optional)

For the Frosting:
• ½ cup unsalted butter
• 3 cups powdered sugar
• 1½ tsp vanilla extract
• 2–3 tbsp milk (adjust for consistency)

Instructions

1️⃣ Make the Batter:
Preheat oven to 350°F (175°C). Grease a 9×13-inch pan. In a large bowl, cream butter, sugar, and sour cream until smooth. Beat in eggs, mashed bananas, and vanilla. In a separate bowl, whisk flour, baking soda, and salt. Stir into banana mixture until just combined. Fold in walnuts if using.

2️⃣ Bake:
Spread batter evenly in the prepared pan. Bake for 25–30 minutes or until a toothpick inserted in the center comes out mostly clean. Cool completely in the pan.

3️⃣ Make the Glaze:
In a saucepan, melt butter. Remove from heat and whisk in powdered sugar and vanilla. Add milk 1 tablespoon at a time until it reaches a thick, pourable consistency.

4️⃣ Glaze & Slice:
Pour warm glaze over the cooled brownies. Spread evenly and let it drip slightly down the edges. Slice into squares and serve.

Notes

  • Banana Ripeness Tip: Use very ripe bananas with lots of brown spots. The riper they are, the sweeter and more flavorful your brownies will be.

  • Optional Add-ins: Stir in ½ cup chopped walnuts, pecans, or chocolate chips to add texture and flavor.

  • Dairy-Free Version: Substitute butter with plant-based butter, and sour cream with coconut yogurt or a dairy-free sour cream alternative.

  • Gluten-Free Version: Use a 1:1 gluten-free all-purpose flour blend. Add ½ tsp xanthan gum if your blend doesn’t include it.

  • Storage: Store in an airtight container at room temperature for up to 3 days, or refrigerate for 5 days. For longer storage, freeze individually wrapped squares for up to 2 months.

  • Serving Tip: These brownies are amazing served slightly warm with a scoop of vanilla ice cream or a drizzle of caramel.

  • Glaze Variations: Swap vanilla extract in the glaze with maple or almond extract for a fun twist. Add a pinch of cinnamon or nutmeg for spice.
