Ingredients
For the Crust:
• 1½ cups graham cracker crumbs
• ¼ cup granulated sugar
• ½ cup unsalted butter, melted
For the Cheesecake Filling:
• 3 (8 oz) packages cream cheese, softened
• 1 cup granulated sugar
• 2 ripe bananas, mashed
• 1 tsp vanilla extract
• 3 large eggs
• ¼ cup sour cream

• 2–3 tbsp powdered sugar (optional)
Instructions
1️⃣ Prepare the Crust
• Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
• Mix graham cracker crumbs, sugar, and melted butter in a bowl.
• Press mixture firmly into the bottom of the pan and bake for 10 minutes.
• Remove from oven and let cool while preparing the filling.
2️⃣ Make the Cheesecake Filling
• In a large bowl, beat cream cheese and granulated sugar until smooth.
• Mix in mashed bananas and vanilla extract until fully combined.
• Beat in the eggs one at a time, scraping down the bowl between additions.
• Stir in sour cream and heavy cream, mixing until just blended and creamy.
3️⃣ Bake the Cheesecake
• Pour the banana cheesecake filling over the baked crust and smooth the top.
• Bake for 55–65 minutes until the center is set but slightly jiggly.
• Turn off oven, crack the door, and let the cheesecake rest inside for 1 hour.
4️⃣ Chill the Cheesecake
• Remove cheesecake from oven and cool completely at room temperature.
• Once cool, refrigerate for at least 4 hours or overnight for best texture.
5️⃣ Make the Strawberry Drizzle
• In a saucepan, warm strawberry jam or puree with lemon juice over low heat.
• Add powdered sugar if a sweeter glaze is desired.
• Stir until smooth, then let cool slightly.
