Description
Why choose between brownies and pecan pie when you can have both? This mash-up dessert gives you the best of both worlds—fudgy chocolate base, buttery pecan topping, and golden flaky crust. It’s rich, gooey, and perfect for holidays or any day you want to wow with dessert! Serve it warm with a scoop of vanilla ice cream and watch it disappear.
Ingredients
Brownie Base:
• 1 box brownie mix (plus eggs, oil, and water per package instructions)
Pie Crust:
• 1 unbaked 9-inch pie crust (store-bought or homemade)
Pecan Filling:
• 1 cup chopped pecans
• ½ cup corn syrup (light or dark)
• ½ cup sugar
• 2 large eggs
• ¼ cup melted butter
• 1 tsp vanilla extract
Optional Add-ins:
• ½ cup chocolate chips (for extra richness)
Instructions
1️⃣ Preheat & Prep:
Preheat oven to 350°F (175°C). Roll out and fit pie crust into a 9-inch pie dish. Set aside.
2️⃣ Mix the Brownie Batter:
Prepare the brownie mix as instructed on the box. Pour into the pie crust in an even layer.
3️⃣ Make the Pecan Layer:
In a mixing bowl, whisk together chopped pecans, corn syrup, sugar, eggs, melted butter, and vanilla until smooth.
4️⃣ Assemble the Pie:
Sprinkle chocolate chips over the brownie layer (optional). Gently pour the pecan mixture over the top, spreading evenly.
5️⃣ Bake:
Bake for 45–50 minutes or until the center is set and a toothpick comes out with moist crumbs (not raw batter). Tent with foil halfway if the crust browns too quickly.
6️⃣ Cool & Serve:
Cool completely before slicing to allow the layers to set. Serve with whipped cream or a scoop of vanilla ice cream.
Notes
Make-Ahead Tips
-
You can bake the pie 1–2 days ahead. Let it cool completely, then cover and store in the fridge until ready to serve. The flavors actually get better overnight!
Freezer Friendly
-
Yes! Wrap the entire pie or individual slices in plastic wrap and foil. Freeze for up to 2 months. Thaw overnight in the fridge before reheating.
Reheating Instructions
-
For the best texture, warm slices in the microwave for 15–20 seconds, or reheat the whole pie in the oven at 300°F for 10–15 minutes.
Substitution Ideas
-
No corn syrup? Use maple syrup or honey (1:1 ratio).
-
Dairy-free? Use plant-based butter and a dairy-free brownie mix.
-
Gluten-free? Swap in a GF crust and brownie mix.
Serving Suggestions
-
Serve warm with vanilla ice cream, whipped cream, or a drizzle of caramel. A pinch of flaky sea salt on top brings out the chocolate even more.
