Description

Buckeye Graham Crackers are a quick and irresistible no-bake dessert featuring a crisp graham cracker base, a creamy peanut butter filling, and a smooth chocolate coating. Finished with a drizzle of peanut butter chips, these treats are perfect for holidays, parties, or anytime you crave a chocolate-peanut butter fix without turning on the oven.


Ingredients

  • 12 graham crackers, broken in half

  • 1 ½ cups creamy peanut butter

  • ½ cup butter (softened)

  • 2 ½ cups powdered sugar

  • 1 tsp vanilla extract

  • 3 ½ cups semi-sweet chocolate chips

  • 4 tbsp vegetable oil, divided

  • 1 cup peanut butter chips


Instructions

1️⃣ Prepare the Graham Cracker Base
• Break each graham cracker sheet in half to make even squares.
• Arrange them in a single layer on a parchment or silicone mat-lined baking sheet.

2️⃣ Make the Peanut Butter Filling
• In a large mixing bowl, combine creamy peanut butter, softened butter, powdered sugar, and vanilla extract.
• Mix with an electric mixer until smooth and creamy.
• Scoop about 1 tablespoon of mixture, roll into a ball, and place one on each graham cracker square.
• Gently flatten the peanut butter filling to cover the cracker evenly.

3️⃣ Coat with Chocolate
• In a microwave-safe bowl, combine semi-sweet chocolate chips and 3 tbsp vegetable oil.
• Microwave in 30-second intervals, stirring between each, until smooth.
• Dip each cracker into the chocolate, allowing excess to drip off, and return to the baking sheet.

4️⃣ Add Peanut Butter Drizzle
• Melt peanut butter chips with 1 tbsp vegetable oil in the microwave, stirring every 30 seconds until smooth.
• Drizzle over the chocolate-coated crackers.

5️⃣ Chill and Serve
• Refrigerate for at least 30 minutes until the chocolate is fully set.
• Store in an airtight container in the fridge until ready to serve.
