For the Dough:

  • 1 tbsp granulated sugar

  • 3½ cups all-purpose flour

For the Baking Soda Bath:

  • 10 cups water

  • ¼ cup baking soda

For the Topping:

  • 1 large egg, beaten (for egg wash)

  • 2 tsp ground cinnamon

  • ½ cup granulated sugar

  • 2 tbsp melted butter (optional, for brushing after baking)


Instructions

1️⃣ Activate Yeast
In a small bowl, combine 1 cup warm water, 2¼ tsp active dry yeast, and 1 tbsp sugar. Stir gently and let sit for 5–10 minutes until the mixture is foamy and bubbly.

2️⃣ Make the Dough
In a large mixing bowl, whisk together 3½ cups all-purpose flour and 1 tsp salt. Pour in the yeast mixture and 2 tbsp melted butter, then stir until a rough dough forms.

3️⃣ Knead & Rise
Transfer the dough to a lightly floured surface and knead by hand for 5–7 minutes, or until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let rise for 1 to 1½ hours, until doubled in size.

4️⃣ Shape the Pretzels
Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into an 18-inch rope, then twist into a traditional pretzel shape.

5️⃣ Prepare Baking Soda Bath
Preheat your oven to 375°F (190°C). In a large pot, bring 10 cups water and ¼ cup baking soda to a boil. Gently drop each pretzel into the boiling water for 30 seconds, one at a time. Remove with a slotted spoon and place on a parchment-lined baking sheet.
