2 medium yellow squash, sliced into ¼-inch rounds

½ cup grated Parmesan cheese

½ cup panko breadcrumbs

½ tsp garlic powder

½ tsp paprika

¼ tsp black pepper

Pinch of salt

Instructions
1️⃣ Prepare the Squash
• Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
• Slice squash into rounds and pat dry with paper towels.
2️⃣ Mix the Coating
• Combine Parmesan, panko, garlic powder, paprika, salt, and pepper in a bowl.
• Drizzle squash slices with olive oil.
3️⃣ Coat the Slices
• Press each squash round into the Parmesan mixture until well coated.
4️⃣ Bake to Perfection
• Arrange slices in a single layer on the baking sheet.
• Bake 18–20 minutes, flipping halfway, until golden and crispy.
5️⃣ Serve and Enjoy
• Garnish with parsley and lemon wedges. Serve with dipping sauces.
