Notes
-
Use gel food coloring (not liquid) for a vibrant blue without altering the texture. Start with 1/8 teaspoon and adjust gradually.
-
Chill overnight for the best texture and flavor. The cheesecake sets fully and slices cleanly after 8 hours or more in the fridge.
-
Crust tip: For extra chewiness, underbake the blondie base slightly—about 15 minutes.
-
Make ahead: You can prepare the cheesecake 1–2 days in advance. Add the ganache and decorations just before serving for the freshest look.
-
Freezing: This cheesecake freezes well for up to 2 months. Wrap it tightly in plastic wrap and foil. Thaw in the fridge overnight before serving.
-
Decoration ideas: Top with mini cookies, Oreo halves, blue frosting swirls, and candy eyes to amplify the Cookie Monster theme.
-
Don’t skip the water bath unless using alternative moisture methods. It helps create a smooth, creamy cheesecake without cracks.
