Ingredients
For the Cheesecake Filling
• 16 oz cream cheese, softened

• ½ cup cold heavy cream

• 12 oz semi-sweet chocolate chips

Instructions
1️⃣ Make the Cheesecake Filling
In a large mixing bowl, beat cream cheese until smooth and fluffy. Add powdered sugar, vanilla extract, and lemon juice. Mix until fully combined and creamy.
2️⃣ Whip the Cream
In a separate bowl, beat cold heavy cream until soft peaks form.
3️⃣ Fold & Freeze
Gently fold the whipped cream into the cheesecake mixture. Spread into a parchment-lined 8×8-inch pan to about 1-inch thickness. Freeze for 4–5 hours or until solid.
4️⃣ Cut into Stars
Lift the cheesecake slab from the pan. Use a star-shaped cookie cutter to punch out stars, dipping the cutter in warm water for clean cuts.
5️⃣ Insert Sticks
Gently insert wooden sticks into the bottom of each star. Return to the freezer for 30–60 minutes to firm up.
6️⃣ Melt the Chocolate
Melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth. Let cool slightly.
7️⃣ Dip & Coat
Dip frozen cheesecake stars into the melted chocolate and turn to coat fully. Place on a parchment-lined tray—the coating will set fast!
8️⃣ Decorate
Melt red, white, and blue candy melts separately. Drizzle over each pop in fun, festive patterns. Add sprinkles if using.
9️⃣ Chill & Serve
