Notes
-
Use ripe peaches: The sweetness and juiciness of your cobbler depend on it. If your peaches are firm, let them ripen in a paper bag for a day or two.
-
Peeling tip: If you’re short on time, you can skip peeling the peaches. The skin softens during baking and adds a rustic touch.
-
No cornstarch? A tablespoon of flour or tapioca starch can be used instead to thicken the filling.
-
Want a crunchier top? Sprinkle raw sugar or turbinado sugar on the batter before baking for a golden, crisp finish.
-
Make it ahead: You can prep the peach filling and refrigerate it overnight. Assemble and bake just before serving for the freshest result.
-
Flavor boost: Add a pinch of ground ginger or cardamom to the peaches for a warm, spiced depth.
-
Serving idea: It pairs wonderfully with vanilla bean ice cream or a dollop of Greek yogurt for a contrast of textures.
