Ingredients
For the Peach Filling:

• ½ cup granulated sugar
• ¼ cup brown sugar

• 1 tbsp fresh lemon juice
• 2 tsp cornstarch
For the Cobbler Topping:
• 1 cup all-purpose flour
• ¼ cup granulated sugar

• 6 tbsp cold unsalted butter, cubed
• ¼ cup boiling water

Instructions
1️⃣ Preheat Oven & Bake Peaches:
• Preheat oven to 425°F (220°C).
• In a large bowl, toss sliced peaches with sugars, cinnamon, nutmeg, lemon juice, and cornstarch.
• Pour peach mixture into a 2-quart baking dish.
• Bake for 10 minutes to soften and release juices.
2️⃣ Make the Cobbler Topping:
• In a separate bowl, combine flour, sugars, baking powder, and salt.
• Cut in cold butter with a pastry blender or fingers until mixture resembles coarse crumbs.
• Stir in boiling water until a soft dough forms.
3️⃣ Assemble the Cobbler:
• Carefully spoon the topping over the hot peach mixture in rustic dollops—don’t worry about covering it fully.
4️⃣ Add Cinnamon-Sugar:
• In a small bowl, mix granulated sugar and cinnamon.
• Sprinkle evenly over the topping for a crunchy, golden finish.
5️⃣ Bake Until Golden & Bubbling:
• Return to oven and bake for 30–35 minutes, or until the topping is golden brown and the peaches are bubbling.
6️⃣ Cool Slightly & Serve:

Notes
Fresh peaches offer the best flavor and texture—avoid canned if possible. If using frozen, thaw and drain first.
Don’t skip the prebake step for the peach filling—it helps concentrate flavor and prevents sogginess.
Use cold butter for the topping to get that golden, flaky crust. Room temperature butter won’t give the same texture.
Let the cobbler rest for 10–15 minutes before serving. This helps the filling set and makes scooping easier.
