  • Author: Joriel
  • Total Time: 25 minutes
  • Yield: 12 sushi pieces (approx. 4 servings)
  • Diet: Vegetarian

Description

Looking for a dessert that’s bright, fun, and totally no-bake? 🎉 This Fruity Pebbles Sushi is made with soft marshmallow cereal rice, a sweet cream cheese center, and loads of Fruity Pebbles for color and crunch. Rolled just like sushi, each piece is a chewy, creamy bite of fruity goodness! It’s perfect for birthday parties, kid-friendly snacks, or just something unique to serve your guests!

Ingredients

  • 3 cups mini marshmallows
    • 2 tbsp butter
    • 2 cups crispy rice cereal
    • ½ cup Fruity Pebbles cereal (for inside)
    • 1 large fruit roll-up
    • 4 oz cream cheese, softened
    • 2 tbsp powdered sugar
    • 1 tsp vanilla extract
    • ½ cup Fruity Pebbles cereal (for coating)

Instructions

1️⃣ Make the Marshmallow Rice Base:
In a saucepan, melt butter and marshmallows over medium-low heat until smooth.
Remove from heat and stir in crispy rice cereal. Let cool slightly.

2️⃣ Shape the Base:
Press the mixture onto parchment paper into a rectangle (about ¼ inch thick).
Place a fruit roll-up over the top, pressing gently to stick.

3️⃣ Add the Filling:
Mix cream cheese, powdered sugar, and vanilla until smooth.
Spread evenly over the fruit roll-up. Sprinkle with ½ cup Fruity Pebbles.

4️⃣ Roll It Up:
Carefully roll from one end into a tight log, using the parchment to help.
Chill for 15–20 minutes to firm up.

5️⃣ Coat & Slice:
Unwrap and gently press remaining Fruity Pebbles around the outside.
Slice into 1-inch sushi-style pieces and serve!

Notes

  • Make Ahead Tip: Prepare the sushi roll up to 24 hours in advance and store it tightly wrapped in the fridge. Slice just before serving to maintain the perfect texture.

  • Storage: Store leftovers in an airtight container with parchment between layers to prevent sticking. Best enjoyed within 2–3 days.

  • Allergy-Friendly Swaps:

    • Use dairy-free cream cheese for a vegan version.

    • Choose certified gluten-free crispy rice cereal and marshmallows if needed.

  • Rolling Tip: Lightly grease your hands or spatula with butter or oil when pressing the marshmallow base to avoid sticking.

  • Presentation Idea: Serve the sushi pieces with mini chopsticks or in colorful cupcake liners for a fun party touch.

  • Flavor Variations:

    • Add crushed freeze-dried fruits inside for extra texture.

    • Try chocolate hazelnut spread or peanut butter as a delicious filling alternative.
