Ingredients

  • ¾ cup (95g) all-purpose flour

  • 2 tablespoons cocoa powder

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 1¼ cups (225g) dark chocolate, chopped

  • ¼ cup (56g) butter, salted or unsalted

  • 2 large eggs, room temperature

  • ¾ cup (100g) caster sugar

  • ½ cup (90g) Demerara sugar

  • 1 teaspoon vanilla extract

  • ½ cup (85g) dark or milk chocolate chips


Instructions

1️⃣ Melt the Chocolate Base
• In a heatproof bowl, melt chopped dark chocolate and butter over a double boiler.
• Stir until completely smooth and glossy.
• Remove from heat and mix in the vanilla extract.

2️⃣ Whip the Eggs and Sugars
• In a mixing bowl, beat the eggs, caster sugar, and Demerara sugar.
• Use a hand mixer to whip on high speed for 5 minutes until pale, thick, and fluffy.

3️⃣ Mix Dry Ingredients
• In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
• Stir in the chocolate chips to coat them lightly in flour.

4️⃣ Combine Everything
• Fold the melted chocolate mixture into the whipped eggs and sugar.
• Gently fold in the dry ingredients until just combined. Avoid overmixing.

5️⃣ Scoop and Bake
