Notes
-
Peaches: Use ripe, fresh peaches when in season for the best flavor. If unavailable, frozen (thawed and drained) or canned (in juice, drained and patted dry) are great alternatives.
-
Butter: Use unsalted butter for control over saltiness. Cold butter is key for a firm crust; melted butter works best for crumb topping.
-
Sugars: A blend of white and brown sugar adds depth. You can use coconut sugar or monk fruit for a low-glycemic version.
-
Flour: All-purpose flour keeps it classic. For gluten-free bars, use a 1:1 baking flour with xanthan gum.
-
Lemon Juice: Balances the sweetness and keeps the peaches from browning.
