Golden, buttery crust + a juicy peach filling + a cinnamon-sugar crumb topping = pure summer bliss! These bars are bright, fresh, and melt-in-your-mouth delicious—perfect for BBQs, picnics, or cozy afternoons with coffee.

Ingredients

Crust:
• 1 cup all-purpose flour
• ¼ cup granulated sugar
• ¼ tsp salt
• ½ cup unsalted butter, cold and cubed

Peach Filling:
• 3–4 large peaches, peeled, pitted, and sliced
• ½ cup granulated sugar
• 2 tbsp all-purpose flour
• 1 tbsp lemon juice
• ½ tsp vanilla extract

Crumb Topping:
• ½ cup all-purpose flour
• ¼ cup granulated sugar
• ¼ cup brown sugar
• ¼ tsp cinnamon
• ¼ tsp salt
• ¼ cup unsalted butter, melted

Instructions

1️⃣ Prep & Preheat:
• Preheat oven to 350°F (175°C).
• Line a 9×9 inch baking pan with parchment paper, leaving overhang for easy lift-out.

2️⃣ Make the Crust:
• Mix flour, sugar, and salt in a bowl.
• Cut in cold butter until crumbly.
• Press mixture firmly into prepared pan.
• Bake 15–18 minutes until lightly golden. Let cool slightly.

3️⃣ Peach Filling:
• In a large bowl, gently toss peaches with sugar, flour, lemon juice, and vanilla.
• Spread evenly over baked crust.

4️⃣ Crumb Topping:
• In a separate bowl, mix flour, sugars, cinnamon, and salt.
• Stir in melted butter until crumbs form.
• Sprinkle evenly over peaches.

5️⃣ Bake:
• Bake for 45–50 minutes or until top is golden brown and filling is bubbling.
• Cool completely in the pan on a wire rack.

6️⃣ Serve:
• Use parchment to lift out and slice into bars.
• Dust with powdered sugar if desired. Enjoy!

Notes

  • Peaches: Use ripe, fresh peaches when in season for the best flavor. If unavailable, frozen (thawed and drained) or canned (in juice, drained and patted dry) are great alternatives.

  • Butter: Use unsalted butter for control over saltiness. Cold butter is key for a firm crust; melted butter works best for crumb topping.

  • Sugars: A blend of white and brown sugar adds depth. You can use coconut sugar or monk fruit for a low-glycemic version.

  • Flour: All-purpose flour keeps it classic. For gluten-free bars, use a 1:1 baking flour with xanthan gum.

  • Lemon Juice: Balances the sweetness and keeps the peaches from browning.
