These Honey Butter Cornbread Poppers are bite-sized golden mini muffins filled with corn, cheddar cheese, and brushed with a warm, sweet honey butter glaze. They’re perfect as a comforting snack, side dish, or crowd-pleasing appetizer for holidays, potlucks, BBQs, or brunch boards.
Ingredients
For the Cornbread Poppers:

1 cup yellow cornmeal

¾ cup all-purpose flour

1 tbsp sugar

1 tsp baking powder

½ tsp baking soda

½ tsp salt

2 large eggs
-
¾ cup buttermilk
-
¼ cup unsalted butter, melted

½ cup corn kernels (fresh or canned)

½ cup shredded sharp cheddar cheese
For the Honey Butter Glaze:

¼ cup unsalted butter
-
2–3 tbsp honey (to taste)

Pinch of salt

Optional: chopped parsley for garnish
Instructions
1️⃣ Preheat & Prep Pan
• Preheat oven to 375°F (190°C).
• Grease a mini muffin tin or silicone mold thoroughly.
2️⃣ Make the Batter
• In one bowl, whisk cornmeal, flour, sugar, baking powder, baking soda, and salt.
• In another bowl, whisk eggs, buttermilk, and melted butter.
• Add wet ingredients to dry and mix until just combined.
• Fold in corn and shredded cheddar gently.
3️⃣ Fill & Bake
• Spoon batter into muffin tin cavities, filling ¾ full.
• Bake 12–15 minutes until golden and a toothpick comes out clean.
4️⃣ Make the Honey Butter
• Melt butter in a small saucepan over low heat.
• Stir in honey and a pinch of salt until smooth.
5️⃣ Glaze & Serve
• While poppers are still hot, brush generously with warm honey butter.
• Let cool slightly before serving.
• Sprinkle with parsley if desired.
