Ingredients

  • 8 oz uncooked spaghetti

  • 2 cups shredded rotisserie chicken

  • 1 can (10.5 oz) cream of chicken soup

  • 1 can (10 oz) Rotel diced tomatoes with green chilies

  • 1 cup shredded sharp cheddar cheese

  • 1 cup cubed Velveeta cheese

  • ½ teaspoon cayenne pepper

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt & black pepper to taste

  • 1 tablespoon olive oil or butter (optional for greasing)

  • Extra shredded cheese or breadcrumbs for topping (optional)

Instructions

1️⃣ Prepare the Spaghetti

• Boil spaghetti in salted water until al dente (about 7–8 minutes).
• Drain and set aside.

2️⃣ Create the Creamy Sauce

• In a large saucepan over medium heat, combine cream of chicken soup, Rotel, cheddar, Velveeta, garlic powder, onion powder, and cayenne.
• Stir constantly until cheeses melt and sauce is creamy.

3️⃣ Combine Pasta & Chicken

• Stir in shredded rotisserie chicken to the sauce mixture.
• Add cooked spaghetti and mix until well coated.

4️⃣ Assemble the Casserole

• Preheat oven to 375°F and grease a 9×13 baking dish.
• Pour the mixture into the baking dish evenly.
• Top with extra cheese or breadcrumbs if desired.

5️⃣ Bake to Perfection

• Bake uncovered for 25–30 minutes, or until bubbly and golden on top.
• Let it rest 5 minutes before serving.

Notes

  • For a milder version, use mild Rotel or plain diced tomatoes.

  • Want extra heat? Add jalapeños, red pepper flakes, or hot sauce to the sauce.

  • Swap cream of chicken soup with Greek yogurt or homemade béchamel for a cleaner version.

  • You can prepare this casserole up to 24 hours in advance, just cover and refrigerate before baking.

  • This dish freezes well for up to 3 months.

  • Serve with cornbread, a light salad, or Southern lemonade for a full meal.
