This juicy, flavor-packed Mushroom-Beef Blended Burger is the perfect fusion of hearty ground beef and umami-rich mushrooms. Ingredients
Mushroom-Beef Blend:
• 12 oz white mushrooms, trimmed
• 1 lb 80% lean ground beef
• 1¼ tsp kosher salt
• ½–2 tsp black pepper
Cooking & Assembly:
• 1½ tsp vegetable oil
• 4 hamburger buns, toasted
• 4 slices cheese (American, Swiss, or cheddar – optional)
Optional Toppings:
• Leaf lettuce
• Sliced tomatoes
• Mayonnaise, mustard, or burger sauce (optional)
Instructions
1️⃣ Make the Mushroom Paste
• Add trimmed mushrooms to a food processor and pulse until they resemble thick oatmeal.
• Transfer to a covered microwave-safe bowl and microwave for 3 minutes, stirring halfway.
• Spoon the hot mixture into a fine-mesh sieve set over a bowl. Press with a spatula to extract ½ cup of liquid. If more is extracted, stir some back in.
• Chill the paste in the refrigerator for 20 minutes.
2️⃣ Blend with Ground Beef
• Return the cooled mushrooms to the processor. Add ground beef and kosher salt.
• Pulse for about 20 seconds until the mixture looks uniform and begins pulling away from the bowl.
• Divide into 4 equal portions and shape into 4½-inch patties.
• Season both sides of each patty with black pepper.
3️⃣ Cook the Patties
• Heat vegetable oil in a nonstick skillet over medium-high heat.
• Cook patties for 6–10 minutes, flipping once, until they reach an internal temp of 135°F (medium-rare) or 155°F (medium-well).
• During the final minute, top with cheese if using.
• Let patties rest for 5 minutes off the heat.
4️⃣ Assemble the Burgers
• Layer toasted buns with lettuce, tomato, and sauce as desired.
• Place patties on the buns, top, and serve warm.
Notes
- We recommend freshly ground 80/20 beef where you can still see individual strands from the meat grinder. Using compacted ground beef packaged in tubes can create dense, tough patties.
- Mushrooms release moisture as they cook, so in many cases, you won’t need to add oil to the nonstick skillet—but feel free to use a light coating if preferred.
- For easier patty handling, use wax or parchment paper above and below the burger when shaping. It prevents sticking and helps with clean transfer to the pan.
