With crisp edges and melt-in-your-mouth centers, they’re loaded with chocolate chips and irresistible peanut butter ribbons. Easy to prep and freezer-friendly, these cookies are perfect for holidays, gifting, or late-night sweet cravings.

Ingredients

Peanut Butter Dough:
• ½ cup creamy peanut butter
• ¼ cup softened butter
• ½ cup brown sugar
• 1 egg
• 1 tsp vanilla extract
• 1 cup all-purpose flour
• ½ tsp baking soda
• ¼ tsp salt

Brownie Dough:
• ½ cup melted butter
• 1 cup granulated sugar
• ⅓ cup cocoa powder
• 1 egg
• 1 tsp vanilla extract
• ¾ cup all-purpose flour
• ¼ tsp baking powder
• ¼ tsp salt
• ½ cup chocolate chips

Instructions

1️⃣ Make Peanut Butter Dough:
In a large bowl, cream peanut butter, softened butter, and brown sugar until fluffy.
Add egg and vanilla, then mix in flour, baking soda, and salt until just combined. Set aside.

2️⃣ Make Brownie Dough:
In a separate bowl, whisk melted butter and granulated sugar.
Stir in cocoa powder, egg, and vanilla extract until smooth.
Mix in flour, baking powder, and salt, then fold in chocolate chips.

3️⃣ Chill the Doughs:
Refrigerate both doughs for 30 minutes to make scooping and swirling easier.

4️⃣ Preheat & Scoop:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
Scoop small blobs of each dough and gently swirl together using your hands or a spoon. Roll into large dough balls.

5️⃣ Bake the Cookies:
Place dough balls 3 inches apart on baking sheet.
Bake for 9–11 minutes or until edges are set and centers are soft.
Let cool on the pan for 5 minutes before transferring to a wire rack.

Notes

  • Use room temperature ingredients: For best results, ensure your eggs, butter, and peanut butter are at room temp before mixing. This helps both doughs blend smoothly.

  • Don’t over-swirl the doughs: Swirl the peanut butter and brownie doughs just enough to create a marbled look. Overmixing will muddy the swirl pattern.

  • Chill the doughs: Chill each dough for at least 30 minutes before shaping. This prevents spreading and helps the cookies bake up thick and gooey.

  • Make ahead and freeze: Scoop and swirl the dough, then freeze. Bake straight from the freezer—just add 1–2 minutes to the baking time.

  • Gluten-free option: Substitute the all-purpose flour with a 1:1 gluten-free baking blend for a GF-friendly treat.

  • Customize your chocolate: Use dark, milk, or white chocolate chips depending on your sweetness preference. Chopped chocolate bars also work beautifully for gooey pockets.

  • Texture tip: If your cookies seem too dry, reduce flour slightly or underbake by 1 minute. If too wet or greasy, increase chill time.

  • Perfect for any occasion: These Peanut Butter Brownie Swirl Cookies are ideal for holidays, birthdays, or anytime cravings hit.
