Description

These Ranch Garlic Parmesan Chicken Skewers are the ultimate summer grilling favorite—juicy chicken marinated in creamy ranch dressing, fresh garlic, and parmesan cheese, then grilled to golden perfection. Perfect for BBQs, meal prep, or a crowd-pleasing dinner, these low-carb skewers are crispy on the outside, tender on the inside, and bursting with bold flavor.

Ingredients

Scale

For the Marinade:

  • ½ cup ranch dressing

  • ¼ cup grated Parmesan cheese

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp dried or fresh parsley

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • 1 tsp lemon juice (optional)

For the Skewers:

  • lbs boneless, skinless chicken breasts or thighs, cut into 1” cubes

  • Wooden or metal skewers (if wooden, soak in water for 15 minutes)

Instructions

1️⃣ Prepare the Marinade
• In a medium bowl, whisk together ranch dressing, Parmesan, olive oil, garlic, parsley, pepper, garlic powder, and optional lemon juice.
• Set aside 2 tablespoons of marinade if you’d like extra for basting or dipping (optional).

2️⃣ Marinate the Chicken
• Place cubed chicken in a large resealable bag or bowl.
• Pour marinade over the chicken and toss to coat thoroughly.
• Cover and refrigerate for at least 30 minutes, ideally 2 hours.

3️⃣ Prepare the Skewers
• Thread marinated chicken cubes onto skewers, leaving slight gaps between pieces.
• If using wooden skewers, ensure they are soaked to prevent burning.

4️⃣ Grill the Chicken Skewers
• Preheat outdoor grill or grill pan to medium-high (400–425°F).
• Lightly oil grill grates or pan.
• Grill skewers for 10–15 minutes, turning every 3–4 minutes, until cooked through and lightly charred.
• Internal temperature should reach 165°F.

5️⃣ Serve & Garnish
• Let skewers rest 2–3 minutes.
• Garnish with chopped parsley and a sprinkle of extra Parmesan.
• Serve with dipping sauces or fresh side salads.

Notes

  • You can swap chicken breast for thighs for extra juiciness.

  • To make this dish spicy, add red pepper flakes or cayenne to the marinade.

  • Avoid over-marinating (no more than 24 hours) to prevent mushy texture.

  • Leftover skewers store well in the fridge for 3–4 days or in the freezer up to 2 months.

  • Pair with a cucumber dill salad, grilled veggies, or low-carb crisps for a balanced meal.

  • Use a digital meat thermometer for precise doneness (165°F internal temperature).

  • Don’t reuse leftover marinade without boiling it first for safety.
