Ingredients

• ⅔ cup (90 g) caster sugar
• 1 cup (140 g) plain flour
• 1 tsp baking powder
• 2 tsp milk
• Zest of 1 lemon
• 2 tbsp flaked almonds (optional)


Instructions

1️ Preheat the Oven:
Preheat oven to 160°C fan / 170°C conventional / 325°F.

2️ Prepare the Fruit:
In a bowl, combine peach wedges and raspberries. Sprinkle with caster sugar and gently toss to coat.
Transfer to a greased or parchment-lined baking dish.

3️ Make the Cobbler Topping:
In a separate bowl, mix flour, sugar, lemon zest, and baking powder.
Add cold cubed butter and rub with fingertips until it forms crumbly, pea-sized chunks.
Stir in milk to create a soft cookie dough texture.

4️ Assemble the Cobbler:
Spoon dollops of the topping evenly over the fruit—don’t worry if some fruit peeks through.
