For the Topping:

Instructions
1️⃣ Make the Patriotic Cake Roll:
-
Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment and lightly grease it.
-
In a mixing bowl, beat eggs for 4–5 minutes until thick and pale.
-
Gradually beat in sugar and vanilla.
-
In a separate bowl, whisk flour, baking powder, and salt. Gently fold into egg mixture until just combined.
-
Divide batter into two bowls. Tint one red and the other blue using gel food coloring.
-
Pipe or spoon alternating stripes (or swirls) of red and blue batter into the prepared pan. Smooth the top.
-
Bake 10–12 minutes or until springy to the touch.
-
Remove from oven and immediately invert onto a clean kitchen towel dusted with powdered sugar.
-
Carefully peel off parchment. Roll the cake gently with the towel (short end to short end). Let cool completely rolled.
2️⃣ Prepare the Oreo Cream Filling:
-
In a chilled bowl, beat cold heavy cream, powdered sugar, and vanilla until stiff peaks form.
-
Fold in finely crushed Oreos gently.
3️⃣ Assemble the Cake Roll:
-
Once cake is completely cool, gently unroll it.
-
Spread the Oreo whipped cream evenly across the surface.
-
Re-roll tightly without the towel.
-
Wrap in plastic wrap and chill for 1 hour for clean slicing.
4️⃣ Decorate the Roll:
-
Pipe whipped cream rosettes on top of the roll.
-
Sprinkle with red, white, and blue sprinkles.
-
Add crushed Oreos for extra crunch and flair.
Notes
-
Chill for clean slicing: After rolling, wrap the cake in plastic and chill for at least 1 hour to get clean, sharp slices.
-
Use gel coloring: Gel food coloring gives the most vibrant red and blue hues without thinning your batter.
-
Prevent cracks: Always roll the sponge while it’s still warm and flexible, using a clean towel dusted with powdered sugar.
-
Make ahead: You can prepare the cake roll a day in advance and refrigerate. Decorate just before serving for the best look.
-
Freezer-friendly: This cake roll (undecorated) can be frozen for up to 2 weeks. Thaw in the fridge overnight and then decorate.
-
Oreo variations: Try using Birthday Cake Oreos, Mint Oreos, or Golden Oreos to customize flavor for other holidays or events.
-
Lighten it up: Swap in low-fat whipped topping or reduced-fat Oreos to slightly reduce the calorie and fat content.
