Ingredients
For the Cake:
• 1 box white cake mix
• 1 cup buttermilk
• ½ cup vegetable oil
• 4 large egg whites
• 1 tsp vanilla extract
For the Coconut-Pecan Frosting:
• ½ cup unsalted butter
• 1 cup granulated sugar
• 1 cup evaporated milk
• 3 large egg yolks
• 1 tsp vanilla extract
• 1½ cups sweetened shredded coconut
• 1 cup chopped pecans
Instructions
1️⃣ Prepare Cake Batter
Preheat oven to 350°F (175°C) and grease two 9-inch round pans. Mix cake ingredients in a large bowl until smooth.
2️⃣ Bake the Cake
Divide batter evenly into pans. Bake 25–30 minutes. Cool in pans 10 min, then transfer to wire racks to cool fully.
3️⃣ Make Coconut-Pecan Frosting
Melt butter in a saucepan. Add sugar, evaporated milk, egg yolks, and vanilla. Stir constantly over medium heat until golden and thickened (10–12 min). Stir in coconut and pecans. Let cool slightly.
4️⃣ Assemble the Cake
Place one cake layer on a plate. Spread frosting generously. Add second layer and cover top and sides completely. Top with pecan halves if desired.
