Ingredients

4 boneless, skinless chicken breasts

1 small onion, finely chopped

2 garlic cloves, minced

5 oz fresh spinach, chopped

½ cup crumbled feta cheese

¼ cup sun-dried tomatoes, chopped

Instructions
1️⃣ Prepare the Filling
• Heat olive oil in a skillet over medium heat.
• Sauté chopped onion and garlic until translucent (about 3 minutes).
• Add spinach and cook until wilted.
• Remove from heat, let cool slightly, and mix in feta and sun-dried tomatoes.
• Season with salt and pepper.
2️⃣ Flatten and Prep the Chicken
• Butterfly each chicken breast and pound to ¼-inch thickness.
• Lay flat and season both sides lightly with salt and pepper.
3️⃣ Roll and Assemble
• Spread spinach-feta mixture evenly over each breast.
• Roll up tightly, starting from the small end.
• Secure with toothpicks or kitchen twine.
4️⃣ Bake the Rollups
• Preheat oven to 375°F (190°C). Lightly grease a baking dish.
• Place rollups seam-side down in the dish.
• Bake for 25–30 minutes, or until internal temp reaches 165°F (74°C).
• Remove toothpicks before serving.
