Description

Spinach & Feta Chicken Rollups are the perfect high-protein, low-carb dinner that feels gourmet but takes under an hour to make. Tender chicken breasts are filled with a savory spinach-feta mixture and baked until golden. Whether you’re prepping for the week, feeding a crowd, or hosting a healthy dinner night, these Mediterranean-inspired rollups are a crowd-pleaser.

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 5 oz fresh spinach, chopped

  • ½ cup crumbled feta cheese

  • ¼ cup sun-dried tomatoes, chopped

  • Salt & pepper to taste

  • Toothpicks or kitchen twine (for securing)

Instructions

1️⃣ Prepare the Filling
• Heat olive oil in a skillet over medium heat.
• Sauté chopped onion and garlic until translucent (about 3 minutes).
• Add spinach and cook until wilted.
• Remove from heat, let cool slightly, and mix in feta and sun-dried tomatoes.
• Season with salt and pepper.

2️⃣ Flatten and Prep the Chicken
• Butterfly each chicken breast and pound to ¼-inch thickness.
• Lay flat and season both sides lightly with salt and pepper.

3️⃣ Roll and Assemble
• Spread spinach-feta mixture evenly over each breast.
• Roll up tightly, starting from the small end.
• Secure with toothpicks or kitchen twine.

4️⃣ Bake the Rollups
• Preheat oven to 375°F (190°C). Lightly grease a baking dish.
• Place rollups seam-side down in the dish.
• Bake for 25–30 minutes, or until internal temp reaches 165°F (74°C).
• Remove toothpicks before serving.

Notes

  • For extra Mediterranean flavor, add chopped olives or roasted red peppers to the filling.

  • Make it dairy-free by using plant-based feta cheese or mashed avocado.

  • To meal prep, roll and refrigerate up to 24 hours before baking.

  • To freeze, wrap baked rollups individually in foil or freezer bags. Thaw overnight in the fridge before reheating.

  • Serving tip: Slice into medallions for an elegant presentation. Garnish with fresh herbs or lemon zest.

  • Best paired with fresh salads, roasted veggies, or herb potatoes.
