Ingredients
Taco Shells:
• 6 small flour tortillas
• ½ cup granulated sugar
• 1 tbsp ground cinnamon
• ½ cup unsalted butter, melted
Cheesecake Filling:
• 8 oz cream cheese, softened
• ½ cup powdered sugar
• 1 tsp vanilla extract
• ½ cup heavy whipping cream
Strawberry Topping:
• 1 cup fresh or frozen strawberries, chopped
• ¼ cup granulated sugar
• 1 tbsp lemon juice
• 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
1️⃣ Make the Shells:
Preheat oven to 375°F. Mix sugar and cinnamon. Brush tortillas with melted butter, coat with cinnamon sugar. Drape over oven rack. Bake 8–10 minutes until crisp. Cool fully.
2️⃣ Make the Cheesecake Filling:
Beat cream cheese, powdered sugar, and vanilla until smooth. Separately whip cream until stiff. Fold into cream cheese mix. Pipe into shells and chill if needed.
3️⃣ Make the Strawberry Sauce:
In saucepan, combine strawberries, sugar, and lemon juice. Simmer until juicy. Add cornstarch slurry. Stir until thickened. Let cool completely.
4️⃣ Assemble the Tacos:
Pipe cheesecake filling into each taco shell. Top with strawberry sauce. Serve immediately for crunch.
Notes
-
Make-Ahead Friendly: You can prepare all three components—taco shells, cheesecake filling, and strawberry topping—in advance. Store each separately and assemble just before serving to keep the shells crisp and fresh.
-
Dairy-Free Option: Use coconut whipped cream or dairy-free cream cheese alternatives to create a plant-based version that’s just as creamy and delicious.
-
Shell Shaping Tip: For a perfect taco shape, drape buttered tortillas over the oven rack bars and bake until golden and crisp. Let them cool fully before filling.
-
Flavor Swaps: Try using different fruits like blueberries, mango, or peaches in place of strawberries. You can even mix multiple fruits for a tropical twist.
-
Presentation Tip: For extra flair, dip taco shell rims in melted chocolate or crushed graham crackers. Garnish with whipped cream, mini chocolate chips, or fresh mint for added visual appeal.
-
Serving Suggestion: Serve these dessert tacos chilled with a drizzle of strawberry sauce and a side of vanilla ice cream for a complete summer dessert experience.
