Ingredients
For the Strawberry Filling:
• 1½ cups fresh strawberries, diced
• 2 tbsp granulated sugar
• 1 tsp lemon juice
• 1 tsp cornstarch
For the Cheesecake Filling:
• 1 cup cream cheese, softened
• ¼ cup powdered sugar
• ½ tsp vanilla extract
For Assembly & Frying:
• 8 egg roll wrappers
• 1 egg, beaten (for sealing)
• Vegetable oil, for frying
• Powdered sugar, for dusting
Instructions
1️⃣ Cook the Strawberry Filling:
• In a small saucepan, combine strawberries, sugar, lemon juice, and cornstarch.
• Cook over medium heat until mixture thickens (about 5–7 minutes).
• Let cool completely.
2️⃣ Make the Cheesecake Filling:
• In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
• Chill until ready to use.
3️⃣ Assemble the Eggrolls:
• Lay an egg roll wrapper diagonally on a flat surface.
• Spoon 1 tbsp cheesecake mixture and 1 tbsp strawberry filling into the center.
• Fold in the sides, then roll tightly. Seal the edge with beaten egg.
4️⃣ Fry to Golden Perfection:
• Heat 2–3 inches of oil in a deep pan to 350°F (175°C).
• Fry 2–3 eggrolls at a time until golden brown and crispy (about 2 minutes per side).
• Drain on paper towels and cool slightly.
5️⃣ Finish & Serve:
• Dust with powdered sugar while still warm.
• Serve immediately or enjoy slightly cooled for the perfect crispy-creamy texture!
