• ¾ cup caster sugar
• 1 tbsp lemon juice
• 3 tbsp cornstarch
For the Crumble Layers:

• 1½ cups old-fashioned oats
• 1 cup light brown sugar
• 1 cup unsalted butter, cold and cubed
Instructions
Make the Berry Filling:
In a saucepan, simmer berries and sugar over medium heat until soft and bubbly. Stir in lemon juice and cornstarch. Cook until thickened (5–7 minutes), then set aside to cool completely.

In a mixing bowl, combine flour, oats, and brown sugar. Cut in the cold butter using a pastry cutter or fork until crumbly and moist.
3️⃣ Assemble the Bars:
Line a 22 cm square baking pan with parchment. Press half of the crumble mixture into the base. Spread the cooled berry filling evenly on top, then sprinkle the remaining crumble over the berries.
4️⃣ Bake:
Bake at 170°C (340°F) for 30 minutes, or until the top is golden and crisp. Let cool completely in the pan before slicing.
