This chewy, festive cookie pie is loaded with chocolate chips, red-white-blue M&M’s, and topped with swirls of vanilla frosting and sprinkles. A patriotic dessert that’s perfect for fireworks, picnics, and celebrating freedom with flavor!

Ingredients

For the Cookie Cake:
• ½ cup unsalted butter, softened
• ½ cup packed brown sugar
• ¼ cup granulated sugar
• 1 large egg
• 1 tsp vanilla extract
• 1⅓ cups all-purpose flour
• ½ tbsp cornstarch
• ¼ tsp baking soda
• ¼ tsp table salt
• ½ cup semi-sweet chocolate chips
• ½ cup mini M&M’s (red, white, & blue)
• ¼ cup sprinkles (jimmies)

For the Frosting:
• ¼ cup unsalted butter, softened
• Pinch of salt
• ¾ tsp vanilla extract
• 1 cup powdered sugar
• 1 tbsp heavy whipping cream
• Extra sprinkles for topping

Instructions

1️⃣ Make the Cookie Dough:
• Preheat oven to 375°F. Spray a 9-inch pie plate with nonstick baking spray.
• In a large bowl, beat butter and both sugars until creamy.
• Add egg and vanilla; beat until smooth.
• Add flour, cornstarch, baking soda, and salt; mix until a soft dough forms.
• Stir in chocolate chips, M&M’s, and sprinkles. Spread evenly in the prepared pie plate.
• Bake 17–18 minutes or until golden at the edges. Cool on a wire rack.

2️⃣ Prepare the Frosting:
• In a small bowl, beat softened butter, salt, and vanilla extract until creamy.
• Add powdered sugar and cream; beat until light and fluffy.
• Use a spatula to scrape down the sides as needed for an even consistency.

3️⃣ Decorate the Cookie Cake:
• Transfer frosting to a piping bag fitted with a 1M star tip.
• Pipe swirls around the outer edge of the cooled cookie.
• Add red, white & blue sprinkles before the frosting sets.

Notes

  • Don’t overbake; the center should look slightly soft.

  • Let cool fully before piping to keep frosting neat.

  • Use gel food coloring in frosting for bolder swirls.

  • Customize with gluten-free or dairy-free swaps if needed.
