Ingredients
For the Chicken:
• 4 boneless, skinless chicken breasts, thinly sliced and pounded
• Salt and pepper, to taste
• ½ cup all-purpose flour
• 2 tbsp olive oil
• 4 tbsp butter, divided
For the Sauce:
• 2 garlic cloves, minced
• ½ cup white wine (or use chicken broth)
• 1 cup chicken broth
• Juice of 1 lemon
• 1 tbsp capers (optional)
• Fresh parsley, chopped (for garnish)
Instructions
1️⃣ Prep the Chicken:
• Pound chicken into even thickness.
• Season both sides with salt and pepper.
• Dredge in flour and shake off excess.
2️⃣ Sear the Chicken:
• Heat olive oil + 2 tbsp butter in skillet over medium-high.
• Add chicken and cook ~3 minutes per side until golden and cooked through.
• Transfer to a plate.
3️⃣ Build the Sauce:
• In the same skillet, add garlic and sauté 30 seconds.
• Pour in wine to deglaze the pan, scraping up any browned bits.
• Add chicken broth and lemon juice. Simmer 3–5 minutes.
4️⃣ Finish It Off:
• Stir in remaining 2 tbsp butter and optional capers.
• Return chicken to the pan and spoon sauce over it. Simmer 2–3 minutes to warm through.
5️⃣ Serve:
• Garnish with parsley and lemon slices. Serve hot over mashed potatoes, pasta, or rice.
Notes
-
Gluten-Free Option: Substitute all-purpose flour with gluten-free flour or almond flour for a crisp coating without gluten.
-
Dairy-Free Option: Use plant-based butter to achieve the same richness while keeping the dish dairy-free.
-
Low-Carb/Keto Adaptation: Skip the flour dredge entirely and sear seasoned chicken directly in olive oil and butter. Serve with cauliflower mash or zucchini noodles.
-
No Wine Needed: This recipe uses low-sodium chicken broth only to keep it alcohol-free, kid-friendly, and flavorful.
-
