Ingredients

  • 4 boneless, skinless chicken breasts
    • 1 tsp salt
    • ½ tsp pepper
    • 1 tsp garlic powder
    • 3–4 garlic cloves, minced
    • 1 cup grated Parmesan cheese
    • 4 oz cream cheese (half block)
    • ½ cup chicken broth (optional, for thinning)
    • 12 oz pasta of choice (egg noodles, rotini, or linguine work great)
    • Optional: red pepper flakes, fresh spinach, sun-dried tomatoes
    • Fresh chopped parsley and extra Parmesan, for garnish

Instructions

1️ Prep the Chicken:
• Trim excess fat from chicken breasts.
• Season both sides with salt, pepper, and garlic powder.
• Optional: Sear in a hot skillet for 2–3 minutes per side for added flavor.

2️ Assemble in the Crockpot:
• Place seasoned chicken in the crockpot.
• Top with minced garlic, Parmesan cheese, and cream cheese.
• Cover and cook on low for 4–6 hours or high for 2–3 hours, until chicken is tender and cooked through.

3️ Cook the Pasta:
• About 20 minutes before serving, boil pasta according to package directions. Drain and set aside.

4️ Finish the Dish:
• Once chicken is done, shred it in the crockpot using two forks.
• Stir in cooked pasta until well coated with the creamy sauce.
• Add chicken broth if sauce is too thick.
• Optional: Stir in spinach or sun-dried tomatoes during the last 10–15 minutes.

5️ Garnish & Serve:
• Top with fresh parsley, red pepper flakes, and extra Parmesan.
