  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • ½ red onion, finely chopped

  • 1 jalapeño, seeded and minced (optional)

  • ⅓ cup fresh cilantro, chopped

  • 1 avocado, diced (optional)

For the Dressing:

  • ⅓ cup olive oil

  • ¼ cup fresh lime juice

  • 2 tablespoons apple cider vinegar or white vinegar

  • 1½ teaspoons honey or maple syrup

  • 1 teaspoon chili powder

  • ½ teaspoon ground cumin

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper


Instructions

1️⃣ Prep the Ingredients
• Rinse and drain black beans, black-eyed peas, and corn.
• Dice tomatoes, bell peppers, and red onion. Mince jalapeño and chop cilantro. Dice avocado (if using) last to avoid browning.

2️⃣ Whisk the Dressing
• In a small bowl, whisk together olive oil, lime juice, vinegar, honey or maple syrup, and all spices until emulsified.
