Instructions
1️⃣ Prep the Ingredients
• Rinse and drain black beans, black-eyed peas, and corn.
• Dice tomatoes, bell peppers, and red onion. Mince jalapeño and chop cilantro. Dice avocado (if using) last to avoid browning.
2️⃣ Whisk the Dressing
• In a small bowl, whisk together olive oil, lime juice, vinegar, honey or maple syrup, and all spices until emulsified.
3️⃣ Assemble the Caviar
• In a large bowl, combine black beans, black-eyed peas, tomatoes, corn, peppers, onion, jalapeño, and cilantro.
