Notes
-
For best flavor, use ripe fresh peaches in season. If using canned peaches, choose those packed in juice (not syrup), and drain well.
-
Don’t overmix the batter once you add the dry ingredients—this keeps the cake soft and tender.
-
Sour cream is key for moisture. Full-fat Greek yogurt can be used as a substitute if needed.
-
Allow the cake to cool completely before glazing to prevent the glaze from soaking in or sliding off.
-
If using frozen peaches, thaw and pat dry before folding into the batter to avoid excess moisture.
-
Want a crunchier texture? Add chopped pecans or walnuts to the batter or sprinkle on top before baking.
-
Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days.
-
The cake tastes even better the next day as the peach flavors deepen—perfect for make-ahead entertaining!
-
If glazing ahead of time, let the glaze fully set before covering or storing.
