  • Author: Joriel
  • Total Time: 50–55 minutes
  • Yield: 8 servings
  • Diet: Vegetarian

Description

This sunny peach cake is the summer dessert of your dreams—moist, tender, packed with peachy goodness, and drizzled with a luscious glaze! Perfect for backyard gatherings, summer brunches, or just a slice of golden comfort with tea.

Ingredients

For the Cake:
• 1½ cups all-purpose flour
• 1½ tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• ½ cup unsalted butter, softened
• ½ cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• ½ cup sour cream
• 1 cup canned peaches, drained and chopped

For the Glaze:
• ½ cup powdered sugar
• 2–3 tbsp peach juice (from canned peaches)

Instructions

1️⃣ Preheat & Prep:
• Preheat oven to 350°F (175°C).
• Grease and flour an 8-inch round or square cake pan.

2️⃣ Mix Dry Ingredients:
• In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

3️⃣ Cream Wet Ingredients:
• In a large bowl, cream butter and sugar until light.
• Beat in eggs one at a time, then add vanilla and sour cream.

4️⃣ Combine:
• Gradually mix in dry ingredients.
• Fold in chopped peaches.

5️⃣ Bake:
• Pour batter into prepared pan.
• Bake for 35–40 minutes, or until a toothpick comes out clean.
• Let cool completely.

6️⃣ Glaze:
• Mix powdered sugar with peach juice until smooth.
• Drizzle over cooled cake before serving.

Notes

  • For best flavor, use ripe fresh peaches in season. If using canned peaches, choose those packed in juice (not syrup), and drain well.

  • Don’t overmix the batter once you add the dry ingredients—this keeps the cake soft and tender.

  • Sour cream is key for moisture. Full-fat Greek yogurt can be used as a substitute if needed.

  • Allow the cake to cool completely before glazing to prevent the glaze from soaking in or sliding off.

  • If using frozen peaches, thaw and pat dry before folding into the batter to avoid excess moisture.

  • Want a crunchier texture? Add chopped pecans or walnuts to the batter or sprinkle on top before baking.

  • Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days.

  • The cake tastes even better the next day as the peach flavors deepen—perfect for make-ahead entertaining!

  • If glazing ahead of time, let the glaze fully set before covering or storing.
