Whether you serve it warm with glaze or chilled with a sugar dusting, it’s a showstopper at brunch, holidays, or just your average “treat-yourself” day!
Ingredients
For the Danish:
• 1 sheet puff pastry or 1 pack King Hawaiian rolls, split
• 8 oz cream cheese, softened
• ½ cup sugar
• 1 egg yolk
• 1 tsp vanilla extract
• 1 cup pineapple chunks, drained
• ½ cup strawberries, halved or sliced
• Optional: fresh mint leaves, powdered sugar
For the Glaze (Optional):
• ½ cup powdered sugar
• 1–2 tbsp milk
• ½ tsp vanilla extract
Instructions
1️⃣ Prepare Pastry Base:
If using puff pastry, thaw and roll slightly. If using Hawaiian rolls, split and place the bottom half in a greased loaf pan or baking dish.
2️⃣ Make Cheesecake Filling:
Beat cream cheese, sugar, egg yolk, and vanilla until smooth. Transfer to a piping bag or spoon it generously onto the bottom layer.
3️⃣ Add Fruit:
Press pineapple chunks evenly into the cream cheese layer. Place the top layer of puff pastry or rolls over the filling.
4️⃣ Bake:
Bake at 375°F (190°C) for 25–30 minutes, or until puffed and golden. Let cool slightly.
5️⃣ Garnish:
Top with sliced strawberries, fresh mint, and a dusting of powdered sugar. If using glaze, whisk ingredients until smooth and drizzle over warm pastry.
Notes
-
Puff pastry or Hawaiian rolls work well as a base. Puff pastry gives a flakier texture; rolls create a softer, bread-like finish.
-
Drain pineapple well to prevent a soggy base. Pat strawberries dry before topping.
-
For a make-ahead version, prep the cheesecake filling a day in advance and refrigerate.
-
Optional glaze: Mix ½ cup powdered sugar with 1–2 tbsp milk and ½ tsp vanilla. Drizzle over warm pastry.
-
Try flavor twists like mango slices, coconut flakes, or lemon zest for variety.
-
Best served slightly warm or chilled. Pairs well with coffee, tea, or sparkling mimosas.
-
To store, refrigerate in an airtight container for up to 4 days. Reheat slices in the oven at 325°F for 8–10 minutes to maintain crispness.
-
Freezer-friendly: Freeze before or after baking. Wrap tightly and reheat directly from frozen.
-
This recipe is vegetarian but contains dairy and eggs. Use dairy-free cream cheese for a modified option.
