Notes
-
Use Fresh Lemons: For the best flavor, always use freshly squeezed lemon juice and fresh lemon zest. Bottled juice won’t deliver the same brightness or depth.
-
Don’t Overmix the Batter: Once you combine the dry and wet ingredients, mix just until incorporated. Overmixing can lead to a dense or tough texture.
-
Bake Until Just Set: Lemon brownies should be moist and slightly fudgy. Remove them from the oven when the center is just set and the edges are lightly golden.
-
Cool Before Glazing: Let the brownies cool completely before adding the lemon glaze. If they’re warm, the glaze will melt into the surface and lose that glossy finish.
-
Glaze Consistency Tip: Start with 2 tablespoons of lemon juice in your glaze, then add more, one teaspoon at a time, until you reach the perfect pourable thickness.
-
Storage: Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. Freeze for up to 2 months.
-
Optional Add-Ins: Try folding in white chocolate chips, raspberries, or poppy seeds to create your own flavorful twist!
