Description

Bright, buttery, and bursting with fresh lemon flavor—these lemon brownies are sunshine in dessert form! Topped with a silky lemon glaze, they’re the perfect balance of sweet and tangy. Serve chilled for the ultimate refreshing treat!

Ingredients

Ingredients
Lemon Brownies:
• ¾ cup all-purpose flour
• ¾ cup granulated sugar
• ¼ tsp salt
• ¼ tsp baking powder
• ½ cup unsalted butter, softened
• 2 large eggs
• 2 tbsp lemon zest (from 2 lemons)
• 2 tbsp lemon juice (from ½ lemon)

Lemon Glaze:
• 1 cup powdered sugar
• 2–3 tbsp lemon juice (to desired consistency)
• Extra lemon zest, optional

Instructions

1️⃣ Preheat & Prep Pan:
• Preheat oven to 350°F.
• Line 8×8 pan with parchment, leaving overhang.

2️⃣ Dry Ingredients:
• Whisk together flour, sugar, salt, and baking powder.

3️⃣ Cream Butter & Add Eggs:
• Beat butter until smooth.
• Add eggs one at a time.
• Mix in lemon zest and juice.

4️⃣ Combine & Mix:
• Add dry mix to wet ingredients.
• Stir gently until just combined.

5️⃣ Bake:
• Pour batter into pan and smooth top.
• Bake for 22–25 min, until edges are golden and center is just set.

6️⃣ Glaze:
• Mix powdered sugar and lemon juice until smooth and pourable.
• Spread over cooled brownies. Garnish with lemon zest if desired.

7️⃣ Serve:
• Let glaze set, then lift brownies using parchment. Slice and serve.

Notes

  • Use Fresh Lemons: For the best flavor, always use freshly squeezed lemon juice and fresh lemon zest. Bottled juice won’t deliver the same brightness or depth.

  • Don’t Overmix the Batter: Once you combine the dry and wet ingredients, mix just until incorporated. Overmixing can lead to a dense or tough texture.

  • Bake Until Just Set: Lemon brownies should be moist and slightly fudgy. Remove them from the oven when the center is just set and the edges are lightly golden.

  • Cool Before Glazing: Let the brownies cool completely before adding the lemon glaze. If they’re warm, the glaze will melt into the surface and lose that glossy finish.

  • Glaze Consistency Tip: Start with 2 tablespoons of lemon juice in your glaze, then add more, one teaspoon at a time, until you reach the perfect pourable thickness.

  • Storage: Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. Freeze for up to 2 months.

  • Optional Add-Ins: Try folding in white chocolate chips, raspberries, or poppy seeds to create your own flavorful twist!
