Ingredients

Scale

Coconut Base Layer:

  • 1 cup canned coconut milk (full fat)

  • 1 frozen banana

  • ½ cup frozen pineapple chunks

  • 1 tbsp honey or agave syrup

  • ½ tsp vanilla extract

  • ½ to 1 cup ice

Mango Layer:

  • 1 cup frozen mango chunks

  • ¼ cup orange juice

  • 1 tbsp coconut cream

Raspberry Layer:

  • ¾ cup raspberries (fresh or frozen)

  • 2 tbsp raspberry syrup or strawberry preserves

  • Splash of water for blending

Blue Swirl:

  • ¼ tsp blue spirulina or natural blue food coloring

  • 12 tbsp coconut milk

Optional Toppings:

  • Diced mango or pineapple

  • Star anise or chocolate star topper

  • Whipped coconut cream

  • White chocolate drizzle

Instructions

1️⃣ Prepare the Coconut Base
• Blend coconut milk, banana, pineapple, honey, vanilla, and ice until smooth.
• Set aside or chill while preparing other layers.

2️⃣ Blend the Mango Layer
• Combine mango chunks, orange juice, and coconut cream in a blender.
• Blend until thick and creamy, then refrigerate.

3️⃣ Make the Raspberry Layer
• Blend raspberries, syrup (or preserves), and a splash of water.
• Blend until smooth but thick. Strain if a smoother texture is preferred.

4️⃣ Mix the Blue Swirl
• Stir blue spirulina or food coloring into coconut milk.
• Set aside to drizzle later.

5️⃣ Layer the Drink
• In a chilled glass, begin with the coconut base.
• Slowly add the mango layer over the back of a spoon.
• Spoon in raspberry blend, then drizzle blue swirl gently between or on top.
• Swirl lightly with a straw or skewer for a marbled effect.

6️⃣ Garnish and Serve
• Top with mango chunks, a star anise, and whipped coconut cream.
• Serve immediately with a wide straw or spoon.

Notes

  • Use frozen fruits for a thick, frosty consistency and better layer separation.

  • Always chill your glassware before layering to prevent melting and color bleeding.

  • You can prep each layer in advance and freeze them separately in airtight containers.

  • For a cocktail version, add 1 oz white or coconut rum to the coconut or mango layer.

  • Swap honey with maple syrup or agave for a fully vegan version.

  • Spirulina is tasteless but nutrient-rich—perfect for color and health.

  • Make popsicles by pouring each layer into molds and freezing overnight.
