Description

Ingredients

For the Cake:
• 2½ cups all-purpose flour
• 1½ tsp baking powder

• 1 cup buttermilk

Instructions

1️⃣ Bake the Cake Layers:
• Preheat oven to 350°F (175°C).
• Grease and line two 8-inch round cake pans.
• In a bowl, whisk flour, baking powder, baking soda, and salt.
• In another bowl, cream butter and sugar until fluffy.
• Add eggs one at a time, then stir in vanilla.
• Alternate adding dry ingredients and buttermilk.
• Fold in melted white chocolate and raspberries.
• Pour batter evenly into pans and bake 25–30 minutes.
• Let cool completely before assembling.

2️⃣ Make the Raspberry Filling:
• In a small saucepan, combine raspberries, sugar, lemon juice, and cornstarch.
• Simmer on low heat, stirring, until thickened.
• Cool completely before layering into cake.

3️⃣ Prepare the Frosting:
• Beat butter until light and fluffy.
• Mix in melted white chocolate.
• Gradually add powdered sugar, cream, and vanilla until smooth and fluffy.

4️⃣ Assemble the Cake:
• Place the first cake layer on a plate or stand.
• Pipe a ring of frosting around the edge.
• Spoon raspberry filling inside the ring.
• Add the second cake layer.
• Frost the top and sides generously.
